CSA Year 2 Week 13

So, yeah, a few more tomatoes this week again. Guess I'll need to freeze 'em or make marinara sauce again (& then freeze it). Also, guess I'm going to actually have to do something with these eggplants & the ones in the frig or they'll start taking over. I've gotten a couple of ideas, from baba ganoush (sp?) to Alton Brown's Eggplant Steaks to just throw 'em on the grill. So we'll see how that all goes.

Moussaka is always a yummy thing to make with eggplant also... :P

Ooh! Moussaka is a great idea...enough spice that you don't even know it's eggplant! I've never tried to make it, but I think Pusher has?

I have, but the recipe I tried wasn't very good. (Vegetable version from Epicurious. I should have known when it didn't even have potatoes!)

That said, moussaka is one of my very favorite foods in the world, and if you find a good recipe, I'd love to see it here!

Ok, so I ended up making the classic Eggplant Parmesan with this recipe... http://allrecipes.com/Recipe/Eggplant-Parmesan-II/Detail.aspx from allrecipes.com and it was really quite good! I did salt & rinse the eggplant before using, and I think it helped that it was a nice chunky homemade marinara instead of some thin, runny sauce.
