What's the most challenging thing you've ever made (or tried to)?

I'm not sure, but chocolate eclairs were up there. (Though choux paste is FUN! Much in the same way as lemon curd.)
Mine is beef wellingtons, I think. Yummy, not something to try to do in a hurry. Nor are the from scratch cheese raviolis I made one time either.
Learning to make hard cider was a challenge (exploding bottles anyone?). Learning to make Lambic is going to trump that by at least 10 fold. Sushi was interesting -- STICKY RICE! Baklava was my first encounter with phyllo dough. The Jerk Chicken sauce takes an intense amount of chopping. Hell, even caramel brownies took a while to get right, since I didn't realize how fricken hot my oven in the appartment at college was!
I guess I can't just pick one. Everything new is a challenge.
I find I have the most trouble with desserts/pastries and tend to avoid them. Cake and mouse is okay - beyond that is a headache waiting to happen.
The Chocolate Ganache cake is not difficult, just putzy, and requires a large bowl. I can't think of anything else too complicated that I've attempted. Though I've wanted to try to make croissants and cannoli for awhile now, but I haven't gotten brave enough yet.

When I used to make things, there were the pecan cappucino chocolate treats that were a little involved.

Nothing is hard so much as time consuming. Tamales are time consuming, but oh so good. So are pierogies.
