I was reading an article this weekend about Bison and how it's supposed to be better to eat because it's really lean. Also, I guess the trend towards local foods is helping boost the popularity of Bison. I know that we've had it, but it was always at a restaurant or a fair or something. Has anyone ever cooked Bison at home? Any ideas? Can you do more with it than just make burgers? Have you tried?

I've never had it at home, but I imagine it could be replaced in any recipe that calls for ground beef.
I did have ostrich chili once...
You know, at my usual grocery store, it's in a very convenient freezer case, so I've picked it up a time or two. I actually used it last night to make Diplowhat's Mexi-Cali Casserole, and I've used it before to replace ground beef. I can attest you can't taste the difference in chili, Mexi-Cali casserole, or Manwiches. I figure it's leaner & more sustainable & kind of fun for something different.
I have also subbed ground turkey, which is cheaper, in for chili and Manwiches, too. The last time I made chili I was making a big batch, so I put in both ground turkey and ground buffalo and it was yummy.
P.S. Hmmm... that looks like a good poll question for the day, too! Yay!
I had it at a cookout once, as burgers, and it was good. I think it would be a good ground beef replacement.
I've eaten buffalo, but never cooked with it. It tastes so close to beef that I can't imagine there's a problem. Just might make for a bit dryer hamburger is all. If doing a roast, I would suggest adding a bit more stock (or water plus bulleon) to the pot to make sure it doesn't dry out.
I don't like using ground turkey for chili - the flavor is just too off.
