I hate to say it, but as soon as I saw the latkes made with butternut squash, egg beaters and cooking spray, I declared the entire site to be an unholy affront to all that is righteous and good and deleted it from my cache lest I be imbued with its stain. Blasphemy!
They may be healthy, and even yummy, but for the love of god DON'T call them latkes!!
