Those cream cheese mints that Pusher makes, second on the mint chocolate chip ice cream (or mint chocolate anything, really), and green M&Ms (do they count?). I'm sensing a sweet tooth trend here...
Avocado, snap peas, broccoli, asparagus, a great big WORD on the minty stuff in general, especially grasshoppers (the drinks, not the bugs), and those corn-flakes-and-marshmallow wreaths at Christmas with the red-hot holly berries.
You may have a good idea already, and if you do, use that, but Dude had a poll suggestion about how people dye eggs for easter; Paas? Dudleys? Food coloring? or something else

I do really love a good guacamole. And I also vote for mint chocolate anything.
My grandma used to make corned beef and cabbage every year. I am not a fan, but I love that she made it.
I love mint, so anything mint that has been dyed green, including A's brownies, which were green in spirit.
I'm a fan of green veggies (and Green Veggie) and green beer, as well as mint and drinks with mint. And grasshoppers, which are sorta fake mint.
